After sharing with you my Low Fodmap Curry Spice Mix, today I am back with a recipe to put it to good use: Low Fodmap Chicken Curry.
When you go to eat at an Indian restaurant, you can choose to eat your favourite curry from a long list of elaborate classics like Butter Chicken, Lamb Korma, Chicken Tikka Masala, etc. However, people do not always have enough time to make such dishes at home. It would be like making Lasagne on a weekday!
Today’s Low Fodmap Chicken Curry is a quick and easy Indian chicken curry that can be made for a weeknight meal. It is still creamy and delicious, yet hearty and simple.
This is one of the Indian recipes that I have adapted to the Low Fodmap diet, however, if you are not following the diet, you can still enjoy this dish by simply making the changes I suggest in the notes. So keep reading!
You can serve it with steamed Basmati rice, or make it my Low Fodmap Garlic Naan.

Low Fodmap Chicken Curry
Ingredients
- 750 gms – 26 oz. chicken thighs see the notes
- 1 ½ tbsp garlic infused olive oil
- 3 tsp ginger grated
- 15 curry leaves
- 10 ¼ tsp low fodmap curry spice mix
- 240 ml – 1 cup low fodmap chicken stock
- 150 gms – ½ cup + 2 tbsp lactose-free yogurt
- 2 tbsp lactose-free cream
- 2 medium potatoes cut into 5 cm – 2-inch cubes
- Fresh coriander leaves
Instructions

In a big pot, saute the ginger with the garlic-infused olive oil.

Add the curry leaves and fry for 1 minute.

Add the Low Fodmap Curry Spice Mix and fry it until fragrant.

Add the chicken pieces and stir.

Add the chicken broth, stir and cover. Let it cook for 5 to 10 minutes.

Add the potatoes, cover, and let it cook for 30 or until cooked through.

10 minutes before it’s ready, add the yogurt and cream. Mix well and keep cooking.

Add the fresh coriander leaves and serve.
Recipe Notes
I use a mix of skinless fillets cut into 2 or 3 pieces and skinless drumsticks.
Use the full amount of my Low Fodmap Curry Spice Mix for the above recipe.
If you are not following the low FODMAP diet, simply use regular oil (plus 1 clove of garlic), chicken stock, yogurt, and cream.
